In '97, were the cd players, tape decks, and whatnot the same among all of Ford's vehicles? Did the Ford Probe come with the same Premium CD player the Thunderbird did? Did the Mustang share the same cd player?

From experience: There were (and still are) dozens of different models... many look identical, but have slightly different features. An example is the stereo/CD/Cassette system for the Grand Marquis and Marauder. The Marauder system looks identical, but the subwoofer plug is commanded "active." But the identical system for the GMQ LS Ultimate Edition has the subwoofer plug commanded "inactive." The difference is in the software (firmware?) within the radio, and the model number suffix.
I'm not sure about what the scene was back in 1997, but for an example of Ford radio stuff since ~2001 look here. Just a few basic radios, but literally hundreds of slight differences.
